Is Cobs Sourdough Real Sourdough?
At COBS, we use a levain (a sourdough culture made up of water and flour) – some might say that “levain” is the French term for sourdough starter. We say it’s what gets us that delicious taste. As I am sure you can tell from our bread racks, we use a ton of sourdough culture everyday!
How do I know if my sourdough is real?
Genuine sourdough is made with just flour, water, salt and perhaps other natural ingredients. If it contains additives, baker’s yeast (listed simply as yeast) or chemical leave ing (eg baking powder) then it is not sourdough bread.
Is store bought sourdough real sourdough?
Despite the fact that traditional sourdough ingredients are flour, water, and salt, many store-bought versions include added yeast, ascorbic acid, vinegar, and oil. So, although many grocery stores may carry bread labeled “sourdough”, more often than not they are in fact fake sourdough.

Yes! We bake all of our bread fresh every day. Each bakery makes its own bread on site– we don’t refrigerate, freeze, or transport our products. At the end of each day, leftover baked goods are donated to local charities.
